This cocoa is produced by my friend Dan who has been living in Peru for years and growing cocoa using strict methods. So much so that it is called, the best cocoa in the World. As you know I don’t believe in these rankings because the best doesn’t exist, but this cocoa is of excellent genetic variety and processed in accordance with my philosophy. That is, fermented the right time 7 days in impeccable wooden crates. Dried well in a week and then stored in a cool place. A divine cocoa, full of fragrance and incredible persistence.
