This is a very special cocoa, a victim of a hurricane in 1954 initiated the greatest genetic mutation in history. An act of solidarity resulted in thousands of farmers, from the Caribbean Sea, donating graft branches to repopulate the plants deprived of their foliage by strong winds. The result was a genetic evolution that now accounts for 80 percent of the world’s cocoa varieties.
The late summer crop, from which it takes its name, indicates that it is a modest harvest, that is, where the plants, due to the increased drought, produce less but with more intense and fruity flavors. I couldn’t make a super selection without including this chocolate show.
