Cela s&#8217;appelait la p\u00e2tisserie Delizia et Mary et moi \u00e9tions \u00e0 peine plus que des enfants. J&#8217;avais 20 ans et elle 18.  <\/p>\n<p>Beaucoup de choses se sont pass\u00e9es depuis ce jour, deux filles, Simona et Syria, sont arriv\u00e9es. Le d\u00e9m\u00e9nagement \u00e0 Vicoforte et la transformation d&#8217;une p\u00e2tisserie en une chocolaterie artisanale. Le premier Bean To Bar, \u00e0 une \u00e9poque o\u00f9 les gens ne savaient pas encore ce que cela signifiait. Lorsque des coll\u00e8gues se sont moqu\u00e9s de nos choix. Quoi qu&#8217;il en soit, il faut du courage et nous n&#8217;en avons jamais manqu\u00e9.<\/p>\n<p>Aujourd&#8217;hui, Orlando, le mari de Simona, un jeune homme plein de bonne volont\u00e9, s&#8217;est joint \u00e0 notre famille et mes petits bijoux Leonardo et Michelangelo sont arriv\u00e9s. Tant d&#8217;\u00e9motions et nous n&#8217;en sommes qu&#8217;au d\u00e9but.<\/p>\n<p>Pour l&#8217;occasion, j&#8217;ai eu l&#8217;id\u00e9e de cr\u00e9er cette Colomba sp\u00e9ciale. Pistaches et amandes de Sicile, framboises d\u00e9shydrat\u00e9es et confites de Peveragno, et je l&#8217;ai recouvert de chocolat blanc fabriqu\u00e9 par mes soins avec du lait de bufflonne frais. Seules la passion et l&#8217;expertise ont \u00e9t\u00e9 ajout\u00e9es \u00e0 cette merveille d&#8217;ingr\u00e9dients pour en faire un chef-d&#8217;\u0153uvre du go\u00fbt.<\/p>\n<p>J&#8217;ai voulu exp\u00e9rimenter un nouveau processus de production, quatre renouvellements de levure m\u00e8re peu acide, puis trois p\u00e2tes et une \u00e9mulsion. Pour obtenir une maille dense mais douce, sucr\u00e9e mais sans exc\u00e8s et pas du tout acide. Un parfum de flocons de beurre de cacao et uniquement des baies de vanille de Madagascar pour donner \u00e0 la p\u00e2te un caract\u00e8re doux. Il ne reste plus qu&#8217;\u00e0 l&#8217;essayer. Mais je n&#8217;en ai pr\u00e9vu que 35 et j&#8217;en ai d\u00e9j\u00e0 r\u00e9alis\u00e9 16 que j&#8217;ai vendus, le prochain lot sera r\u00e9alis\u00e9 demain et envoy\u00e9 le lundi 29 mars pour une livraison le mardi 30.
